For RutNut and trout lovers
« on: January 13, 2017, 05:14:50 PM »
So I'm sorry if I appered to demean the Trout. Tues. on a day when the only thing hitting was small gills and perch I was able to at least go home with three trout. (thank you PFBC) Have to admit they fought pretty good on light jigging rods. ;) Looking forward to smoked fish on a bagel with cream cheese for breakfast tomorrow. :D

Brined for 8hours and smoked with apple bark:

have you tried to filet your trout? if not give it a try. no brine just a dry rub on your skinless filets with tony cacciries cajun seasoning. i use a mix of hickory, mesquite, and cherry. careful with the seasoning as the more you add the saltier and spicier it gets.  i had a friend show this way to me and i never smoked a whole fish again.

No prob chez cause you don't have to eat them. ;) They were fun to catch though even though I wasn't targeting them. firewoodflash; I don't usually keep trout so I really haven't filleted them, though I do fillet all my pan fish. I like apple bark or twigs for fish and cheese because it's mild and free! Picked up a bunch more while at the family farm today. I go to hickory and or mesquite if I'm doing ham or meat.

Chez I hated trout also till I had them thru the ice when the meats a pinkish they best. Stickies in season suck. A hatchery guy told me it's bc when they die on ice they aren't stressed if on stringer they stress and meat turns to mush

The colder the water the better the trout.when they come from warmer water they seem mushy to me.
