Did anyone ever try making pickled fish? I'm thinking about pickerel the Pocono Phirrana.

I had some pickeled pickerel that birddog made, pretty tasty.  Maybe he'll give up the recipe

I've got one that is pretty good that a bar owner gave me.  It was known as one of the best in the Honesdale area.  will post as soon as I dig it out-- by tomorrow.

Found the recipe faster than I thought.

Pickled Pickerel

cut fish into bite size pieces taking out the main bones

layer fish and shake table salt on each layer in a large bowl.  I place upside down saucers with fish in between each layer  that way the liquid is squeezed out of the fish and into the bowl  place a weight on top of the layers. leave 18 hrs. in refrigerator

Rinse off

Layer fish and onion and cover with brime for at least 3 days in refrigerator

the small bones will turn into fine black lines in the fish where the bone has desolved.

Brime: 
         2 parts viniger
         1 part sugar
         1 tbl spoon of pickling spice for each quart of vinegar
         Bring to a boil and leave simmer for 20 min.
         chill then pour over the layers of fish and onion

 Keep refrigerated until served
