You cold look up some crab cake recipes. I like to mix an egg, sliced bread crumbs. onion (scallions), pepper (hot), tabasco or Worcestershire sauce, mayo, mix it to a sticky consistency and caot with cornmeal before frying them up. Serve with tartar sauce and cocktail sauce.
now I'm hungry.

x2 on that fm. that sounds good. i usually make salmon patties with egg, bread crumbs, onions, salt, finely cut celery, and some lemon pepper and fry em up. should work great for any fish patty.fms sounds really good to.sometimes tartar sauce, cocktail sauce on the side and sometimes i like a hot salsa. redhot sauce also makes a redhot ketchup and it rocks for a lot of things and a good base for wing sauce.

Pickled Pickerel
2 tsp pickling spice
2 ½ tbs kosher salt
¼ cup sugar
1 onion
white vinegar
1) Cut fillets in to chunks
2) Fill 1 quart Ball jar approximately ¾ full with fish
3) Add, salt, sugar, pickling spice and sliced onion
4) Fill jar with white vinegar
5) Shake until all dry ingredients dissolve
6) Refrigerate 5 days [give it a shake the 3rd day]
7) Eat it right out of the jar or mix with a little sour cream and eat on a cracker as you would pickled herring

By all means use the crush function on your blender for the patties ,the blender function doesn't do the trick well enough .Paprika, salt , pepper and some herbs .  Had some at the end of December. http://s157.photobucket.com/user/njfingerstylejsguitar/media/P1012866_zps30024452.jpg.html?sort=3&o=5
Prefer jigging panfish over setting up tip ups but do both .Use a Hummingbird ICE35 flasher unit .Fish mostly Cupsaw Lake but Waywayanda ,Vernon Valley Lake and Shepherds lake too. Greenwood and Hopatcong  and Green Turtle Pond a few times also.

I skin my pickerel when I clean them.Cut out the rib bones/ribs.  I freeze the fillets in water until I have enough for patties. To the thawed ground fish I add 2 beaten eggs, finely diced onion, parsley. lemon juice and a little ground cayenne pepper. Add flour to make the right consistency to make patties. I have found if I broil them they hold together better than if I fry them. Top them with a little butter when you broil them. Enjoy!
